This salmon poke is my best kept secret in terms of making a nutritious and delicious meal in less than five minutes. Aside from pre-baking my sweet potato and using pre-sliced carrots, I found single serving salmon poke at @costco and I swear it’s been a game changer. While it is $20 and initially seems expensive the cost it works out to is $4 per single pack which is really affordable for 4oz of salmon.

Ingredients:
1/2 sweet potato or 1 cup rice
1/4 cucumber, sliced
1/2 avocado, diced
Handful of pre-sliced carrots
1 Package @costco Dom International Salmon Poke
1/2 Pack @gimme Avocado Oil Seaweed

Dressing:
I recommend a shot glass size generally for 2 poke bowls. The salmon is seasoned with lime and soy sauce so no need to overdo the dressing.

Coconut Aminos
Maple syrup
Sesame oil
Cayenne pepper

*Microwave the sweet potato for 7 minutes or bake for 45 minutes at 350 degrees.
