I first pre-shaped my dough and let it do a bench rest. Pre-shaping has multiple benefits, but one is that it makes final shaping easier.
I folded the top of the dough toward me, then folded the sides, kind of like a package. I tucked in the back piece and then the two loose ends at the back, and then stitched it up down the middle. Then I gently rolled it up, pulled it back toward me to build tension. I sealed up the ends and by gently pinching them, then flipped it over and put it into the proofing basket. After I placed it in the proofing basket, I let it sit for about 20 minutes and then did some final stitching. I prefer to cold proof my loaves in the refrigerator before I bake them.
