After the Clone Wars, many people in the galaxy were wary of droids, associating them with the Separatists. This distrust kept droids out of many establishments. However, after the fall of the Empire, the no-droids policy was eventually lifted. By the time we reach The Mandalorian, we see droids not only allowed in bars but even working behind them!

The earliest example I can remember off the top of my head of a droid running a cantina during the Empire was in Jedi Survivor, with Greez and his cantina which was manned by a droid
