Chef here. The one mistake that most people make when making ceviche is adding lime juice to the fish first. All of the ingredients that you’re going to put in your ceviche you want them to be able to impart flavor in the fish before you cook it in the lime juice. If you put the lime juice on the fish first, then you get no benefit of the high quality ingredients you’re using in your ceviche. Typically what I’ll do is mix my ingredients in with my fish for at least 30 minutes prior to me adding the lime juice. Typically this is salt, pepper, garlic, cilantro, red onion, and aji Amarillo. Of course, you can add anything to ceviche, but most classic ceviche does have some kind of hot pepper element to it. 15 minutes after the lime juice has been added you are ready to eat. Guys do not forget that when you’re using a high-quality fish like flounder and high-quality ingredients that you want to bring the dish together by making sure you impart that flavor in the fish. And the same rule goes for Mexican Aguachile. Tight lines boys

You don’t want worms growing inside you. Make sure to hard freeze your fish fillets for 14 days in a deep freeze. Your fridge freezer won’t get cold enough. The lime juice doesn’t kill the tape worm cysts in the flesh of the fish. If those tapeworm cysts can survive your stomach acid they’ll survive some lime
Juice.

Never cucumbers or cilantro on my ceviche. I’m one of those who finds the taste of cilantro, cucumbers, and celery too overpowering. If I want crunch, the onion will suffice. I like Tapatio with my ceviche.
