try to save the tip for the absolute last. like sharpen up to the tip everything except for the very tip and then get it as you’re finishing up. it makes a big difference on how pointy the knife becomes. this is especially true of the tip is already rounded or broken or if you have to shape it from the spine at all it won’t ever be as pointy until you sharpen up to the point again from the cutting edge. the tip usually gets the most wear and is the most delicate part of the cutting edge so a lot of the time it needs to be thinned back on the cutting edge but it’s impossible to do without rounding the tip slightly unless you intentionally avoid sharpening the very tip…. almost no knives you buy off the shelf are hand sharpened and to change the edge angle can take a lot of work so most people have never experienced the difference but it is like night and day.
