Creamy Red Pesto Ziti
Tonight is one of my favorite Jewish holidays, Shavuot. As a kid who grew up loving dairy-based foods, this was the best time of the year, as it is traditional to have festive meals with special cheese and dairy dishes. This red pesto ziti is a great addition to your Shavuot meal or a weekend treat. You can make the pesto ahead of time and then, just before eating, combine it with the pasta and heavy cream to get a flavorful, extra fresh, and super yummy pasta dish that is hard to stop eating. Served with cabernet sauvignon
Ingredients:
Red Pesto:
• 1 roasted red bell pepper, peeled and cleaned from seeds
• 3 tbsp sun-dried tomatoes
• 1 tbsp tomato paste
• ¼ cup roasted almonds
• ¼ cup fresh basil
• 2 garlic cloves
• ¼ cup grated parmesan cheese
• 1 tsp ground black pepper
• 2 tbsp olive oil
• 1 tsp salt
• 2-4 tbsp pasta water (optional)
For the Pasta:
• 0.5 pound pasta
• 1 cup heavy cream
• ¾ cup grated parmesan cheese (reserve some for serving)
• 3 tbsp red pesto
• 2 shallots, chopped
• 3 garlic cloves, minced
• 2 tsp black pepper
• Kosher salt, to taste
• 4 tbsp olive oil or unsalted butter
For Serving:
• 2 tbsp fresh parsley, chopped (or chives)
