There are different HDMI standards, and the newest graphics cards use a newer standard that old cables do not support. Some old cables are not able to output 4k 120hz or 8k 60hz for this reason

What is more important is the actual version of HDMI: 1.8, 2.0, and 2.1. These have different bandwidths and bit rates. A 2.1 certified cable can output 8K @ 60 FPS, for example.

For 4k, the amount of data that's able to be transferred is extremely important, this means buying a higher end cable not because its pretty or got gold connections but because of the amount of data needed to fulfill 4k+audio. You'll need hdmi 2.1, you still have to be careful however as there no regulation regarding marking hdmi 2.1. So to mitigate this, use display port, they have been 4k compatible since the 90s even though they didn't know it.

The thing is that usual hdmi cables are like 1080p 60hz, but imagine having a 4k 144hz display. You'll get like 20-30hz (I believe).
