The cooling rack idea is very interesting! I microwave provolone, though. It already comes in round slices, and it has the right consistency. You wanna use parchment for that.

Make sure you don't make them too thick or else the shells won't be crispy. I made that mistake when I first made them.

I've made these in a cast iron pan but doing them all together on a sheet pan makes more sense. ๐Ÿ‘

Better option, just use iceberg lettuce leaves. Cheaper, easier, faster, healthier.
