Because I make cooking videos, I often end up with random bits and bobs left from filming. I love the challenge of using these things up, and I loved how these pink noodles turned out!

You can use my classic pad thai sauce (or use the sauce for the vegan pad thai recipe if needed) and all I did differently was use beets instead of garlic chives. I added julienned beets in the initial sauteing step as shown in the video.

I used frozen pressed tofu, but it doesn’t have to be frozen, you can also use meat of your choice.

PS. Don’t bother with 2 types of rice noodles, I did that because I didn’t have enough of one so I had to supplement it with another. And as you can see I had to add them in stages because they take different amounts of time to cook.

To get the recipe for classic pad thai, tap the link at the ▶️ symbol at the bottom of this video and the recipe link is in the description! All you need to do differently is sub julienned beets or garlic chives and add them in the beginning as per this video. To make it vegan, you can use the sauce from my vegan pad thai recipe.

It’s important to remind people you can freestyle things. I think people can get caught up on authenticity and accuracy. Every famous dish started off as someone’s idea that worked out.

I made some smoked pepper garlic chilli oil for pasta because i was hungry and tossing things that i had, fit example, i was actually looking for noodles but didn't have any.

and now i might have cut down my future Asian takeaway orders by thousands of £££ because it was magnificent

Yeah it's always a mystery to try and create something kind of new from ingredients you don't use all the time or just have around

I think if you can cook something really tasty with the random stuff that you have left, that's the mark of a reaI chef, you can't learn this from a book, just experience.
I do it when I have to, but the results are usually mediocre
