Ingredients for lamb: 2kg leg of lamb, 25g mustard powder, 20g salt and 10g black pepper.
For herb crust: 2 stalks of rosemary, chopped, 2 garlic cloves, minced, 3 anchovies, 2 tbsp Dijon, 2 tbsp olive oil.
For mint salsa verde: large handful mint, small handful parsley, 30g dijon mustard, 30g Lemon juice, 2 anchovies, 1 tbsp capers, black pepper, 100ml extra virgin olive oil.
π©βπ³ Method:
1. Score lamb and season with salt, mustard powder, and black pepper.
2. Roast at 200C for 1 hour.
3. Mix rosemary, garlic, mustard seeds, anchovies, and dijon with olive oil for the seasoning paste.
4. Glaze the lamb and cook for 15-25 more minutes at 180C until reaching 58C for a perfect medium rare.
5. Rest lamb for 15 mins.
6. For salsa verde, blend mint, parsley, dijon, mustard, lemon juice, anchovies, capers, pepper, and olive oil.
