To be fair, she has a good reason to always be upset. Her two sons were murdered. But the thing is, she's not always angry with Thor for being drunk. There is even the part in the game where you can hear Sif and Thor having an intimate conversation in their room.

To be fair like you said she was mad at Atreus for being with her daughter because he had already killed one of her sons she was afraid that might happen to thrud
She also didn’t want her daughter to become a Valkyrie because it would sorta be like sending your child to war well more like to there death
And being mad at Thor for being drunk it was more like she was unhappy that Thor wasn’t with the family and was being manipulated by Odin
