so lobster used to be super cheap around the coast because they were plentiful—lobsters spoil extremely fast and this was before boxcar refrigeration so anyone who lived in the midwest, for example, couldn’t try it. they had canned lobster and that was significantly more expensive than the fresh stuff, and coveted in places without it. when we got refrigerated trains, that value kind of spilled over, making all lobster expensive. and the lobster they fed to prisoners wasn’t what you imagine, it was close to rotting bits of cooked lobster, usually crushed into a sort of paste, shell and all, for efficiency’s sake. not very tasty.

It's the same thing with chicken wings. They used to be super cheap, and nobody wanted them. People learned how to make them tasty, they become popular and desirable. Then companies start increasing prices.
