It's a pleasure to watch you two on your life fullfilling journey. And you're doing a fantastic job of transforming your land into an oasis, but I don't think I could've resisted not making the mill operational again in some form. The first time I saw the mill, a Hydro generator is what came to mind.

Could you imagine restoring the mill to a point where you're able to use the installation with a water turbine to generate your own electricity ? Fantasy I know, but cool.
