Baked San Sebastian Cheesecake Recipe | Perfect Result for 18-19 cm Mold
In this video, you can learn all the tricks of making San Sebastian Cheesecake at home! I am sharing my cheesecake recipe with you step by step, which is nicely browned in a 220°C fan oven, soft inside and full of flavor.
📋 Materials:
500 g spreadable cheese
250 ml cream
200 g sugar
3 L eggs
15 g flour (2 tablespoons)
1 packet of vanilla
Construction:
Preheat the oven on a 230°C fan setting.
1-Beat the spreadable cheese and powdered sugar in a mixing bowl. Then add the cream, eggs, flour and vanilla one by one and continue to beat lightly until it has a smooth consistency.
After covering the bottom and sides of the mold with greaseproof paper, wrap the outside completely with aluminum foil. Pour the cheesecake mixture into the 18-19 cm clamp mold. Place the mold on a baking tray with very little water. This method allows the cheesecake to be cooked in a moist environment and prevents it from cracking.
Bake the cheesecake in a preheated 230°C fan oven for about 20 minutes. If the middle is slightly shaking at the end of the baking, the cheesecake is ready.
Take the cheesecake out of the oven and wait for it to come to room temperature. Then cover it and let it rest in the refrigerator for at least one night.
The next day, take the cheesecake out of the fridge and leave it at room temperature for 10-15 minutes before serving.
🔥 Cooking Tips:
You should cover the bottom and sides of the mold with greaseproof paper. Remember to wrap the outside of the mold completely with aluminum foil; this prevents the cheesecake from being damaged when water is added.
If the top grill of the oven browns too fast, you can place the cheesecake on a lower layer from the middle shelf of the oven. You know your oven best :)
If you think the oven doesn't cook evenly, you can turn the direction of the tray during baking.
If the top of the cheesecake browns too fast, you can cover it with greaseproof paper.
If the middle is slightly shaking, the cheesecake is cooked.
