Am also a carpenter just grab an adjustable table that can change height. Works fantastic for rolling some heavy atuff onto the back of your truck too.

I used a similar method to work on some louvered doors. Instead of blocks, I used scrap 2x4 studs with the same notch and wedge.

Cool seeing concepts get used in other contexts!

Traditional joiners preferred their benches much lower than modern power tool workers, definitely not higher. Plane a pile of lumber by hand and you will see that your body weight, rather than arm strength, is what makes for the most efficient planing. Those who did this work for a living bent their legs instead of just bending over at the waist, as suggested here. For this reason, traditional bench height was at height of wrists above floor with arms hanging down straight and naturally.
