Ingredients:
4 cups fine cornmeal
2 tsp. baking soda
2 tsp. salt
4 eggs, beaten
4 c. buttermilk (or sour milk)
1/2 c. bacon drippings
Directions:
1. Preheat oven to 400 degrees Farenheit. Great 10-inch cast iron skillet and set aside.
2. In large mixing bowl, combine cornmeal, baking soda, and salt. Add eggs and buttermilk; mix well. Stir in bacon drippings. Place skillet in oven for 3 minutes to heat up.
3. Pour batter in hot skillet and bake for 40 minutes until golden brown and toothpick inserted in the center comes out clean.
4. Transfer cornbread to a wire rack immediately by sliding it out with a spatula. Cool for 5-10 minutes before cutting and serving.
