As I understand it, olive oil can maybe go a bit bitter. Or has a bit too much olive oil flavour. So it might be worth looking for a milder or more delicate flavoured one or go half olive and half <some nut oil>.

Just remember - if it smells or tastes like crayons it’s rancid

Looks good. I’ve been making my own Mayo for some time using a pasteurized egg, Dijon mustard, salt, red wine vinegar and walnut oil. Love it!

Divine! Didn't realise one could leave the egg white in. I hear if you are not keen on the flavor of olive oil (which gets accentuated in mayo), one can add half olive oil and half avocado oil.
