🌸 Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup beans (drained and rinsed)
- 1 each red, green, and yellow bell pepper (diced)
- 1 onion (diced)
- 1 clove garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper (to taste)
- Lemon juice
- Cherry tomatoes
- Lettuce
- Cabbage
- Low-fat paneer
- Sweet corn
- Shredded cheese
- Cilantro
🌸 Instructions:
1. Pressure cook beans until tender.
2. Cook quinoa with salt until tender.
3. In a pan, heat olive oil over medium heat.
4. Sauté onion and bell pepper with salt and pepper for 2-3 minutes.
5. In the same pan, heat olive oil and add cumin, garlic, and boiled beans. Season with salt and pepper; cook for 2-3 minutes.
6. Assemble all ingredients in a large bowl: quinoa, beans, cherry tomatoes, lettuce, cabbage, low-fat paneer, sweet corn, shredded cheese, and cilantro.
