This not a voltage regulator! Actually It is just a eletronic variable resistor! Mosfets can't transfer voltages like BJT transistors, they act more like voltage-dependent resistor.

It's a very simple circuit, it works? Yep, it works. BUT, isn't the best solution to control the voltage delivered to the load.
The potenciometer has to be about 100k or more to prevent burn and smoke, the transistor probably will overheat if the load got too big and I think a pull-down resistor to the MOSFET will help a little...
I'm still thinking that maybe use a 555 oscilator as a PWM driver is way better than the circuit shown in the video, but this circuit is extremely useful to begginers...
