For the people who don't know what the yellow stuff is: That's the sofrito (Onion Carrot and Cellerystick) but blended so the kids don't complain.

Tinned chopped tomato is not the best..always peeled plum,chopped are tomatoes the bad bits have been cut from

If tomatoes are not the best quality some sugar can be fine to offset acidity

It depends on the quality of the tomatoes.
Sugar balances the acidity from lower quality (tomatoes which didnt get enough sun )tomatoes.
Its absolutely fine

I don't like to blend stuff to much as it often doesn't only change the texture, but also the flavor. I also like to sauté/lightly caramelize some onions as it makes the sauce a little sweeter as well. If the kids don't like the soffrito (the yellow blended stuff in this video, but I don't blend it) you can always use a food mill after you've cooked the sauce. It will also give you a smooth texture, without completely destroying every molecule that blending does 😅

Mhm, i actually use some Sugar aswell, to offset the Acidity a little bit, but not as much as it would get sweet in Taste, so my Recipe is in the Middle of you two, i'd say. :D
