We’re mixing it up a bit today on carnivore with these chicken sausages from costoco and some bacon. They were tasty but dry and needed a lot of added fat. Paired the meats with some hard boiled eggs and Ive got a breakfast of champions. Next I went on my morning walk and then headed to the grocery store to see what kind of deals I could get on meats. Heres 50% off a prime ribeye, some choice steaks, and I found these whole anchovies. Back home its time to air fry some steaks! Im using my Meater Meat thermometers so I don’t over cook these prime steaks. I finished with some carnivore ice cream, but I need to add something to soften it up…maybe guar gum? What do you think?

My ice cream is a pint of cream, pinch of salt , three egg yolks, a scoop of beef isolate protein powder, vanilla extract and decaf instant coffee. If you like coffee it's bomb and it scoops right out. Anyway I just added the protein powder last night and it seemed to soften it out the lot plus I added a third egg yolk when I usually did two because more vitamins. Really enjoying your channel and you're no nonsense voice. 🩷

As a chef of over 25 years, and a carnivore, I can tell you that if you add 1 tsp of vodka as you mix or churn your carnivore ice cream it will be soft, scoopable and have a very ice texture.

Jenny, you have to let your homemade ice cream “ breathe”.. take it out before you eat so it will be soft by the time you are done… Great job btw !

My most recent ice cream experiment: Full fat cottage cheese + heavy whipping cream, vanilla extract made with alcohol, allulose, 1 brick of cream cheese 1 scoop of colostrum powder. There is no added water in this recipe. I was using gelatin as a source of protein but making it with water didn't help the texture. This time I put the gelatin on top of the cold whipping cream and added some hot cream on top to melt it. Then I blended the gelatin cream mixture with the vanilla, cottage cheese and cream cheese. This tastes like cheese cake filling. It's freezing now and we'll see how it turns out. Another thing I've tried is freezing it completely, softening it a bit then running through the food processor to obliterate large ice crystals and make the product more evenly textured. Another way we enjoy the icy ice cream is to take a spoon and scrape the top layer. You get a bowl of light and airy crystalline cream that is like an ice cream snow cone texture. It's pretty great and you can fill a bowl with the volume but it's really much less in the bowl than it looks.

I think the ice cream needs addition of a rareband precious ingredient...patience. Does it scoop better if you take it out of the freezer about 5 minutes before scooping? Will you be sharing your recipe?

I don't care for Xantham Gum, but I've heard it help the ice cream frim freezing solid!!! I've never tried it, but I also heard you can put an oz of clear alcohol....Not really Carnivore... but it might be a nice thing to try. 😂

1 tbsp of vodka in the mix helps a lot. or 1/4 tsp of Tara Gum. I haven't tried guar gum yet. Worth a shot! Let us know cuz it's cheaper than Tara gum.
