There's a LOT of European hunter's stew recipes that start with the same base (chicken stock, aromatics, tomato paste). You can add more flavor by browning the base aromatics first (I'd use a soffrito mix: celery, carrots, onions, all diced small -- or switch the celery with bell peppers) before adding the tomato paste (cook them thoroughly!) then meats, stock, and finally vegs.

I'm Croatian (Europe) and we cook this often, in summer often without the meat and call it sweet cabadge (soup). It is really good and healthy, and yes for a time it was a hit in dieting because it doesent contain a lot of calories, is filling, healthy (and if eaten daily, makes POOP😂)

It's always interesting to me to find names for dishes that I just grew up with, and just called like beef soup/stew or something (probably not the official name just what I knew it by). I like it because it shows me that even though growing up and up until i saw this video that I thought it was a common thing that everyone knew about, doesn't mean it is just because I know about it and the people I know know about it and that's one of my favorite things about the internet
You made it look really good, and I wish I could have a bowl just like when I was younger, great video.

In Mexican culture we make something similar. It's called " Caldo de Res" translating to beef soup. Some people cook it sans tomato or with it. Though a lot of people cook the chicken one (Caldo de Pollo) for healthier reasons. I'm vegetarian, so I make a pure vegetable one. Coincidentally- turns out vegan.

My grandma makes this all the time! She adds in Lima beans, redfish fillets, and crab (we live right near the beach so they’re caught local). She uses ground chicken or turkey instead of beef so it doesn’t overwhelm the redfish. :)
