Gluten free, refined free, no refined sugar, made with healthy millets that’s ragi flour & almond powder, sweetened with dates yet so moist, soft & delicious, then this cake is just for you.

100% Zero oil Millet Choco Cake
Ingredients :
Measurement cup - 200 ml = 130 gms
Wet ingredients :
Fresh curd/yogurt -1 cup(200gms)
Dry dates powder - 3/4th cup(120gms)
Jaggery/coconut sugar can be used
Flaxseed powder-2 tbsp
Milk -1/4th cup(65gms)+ 2 tbsp
Vanilla essence - 1 tsp
Dry ingredients :
Ragi Flour - 1 cup(135gms)
Baking powder - 1 tsp
Baking soda - 1/4th tsp
Cocoa/cacao powder - 2 tbsp
Salt - 1/4th tsp
Almond powder - 2 tbsp
(Grind the almonds to fine powder)
Garnish :
Almonds sliced
Optional-(70% couverture Choco chip & Drizzle 70% melted chocolate)
Method :
Mix all the wet ingredients & let it rest for 5 mins
Sieve the dry ingredients, add salt & almond powder.
Combine till lump free.
Transfer the cake batter in a 8 inch rectangular tin/6 inch round lined & greased tin.
Garnish with slice almonds & choco chips
Bake in a preheated oven @180*C for 40-45 mins or until a skewer inserted comes clean.
Once baked, cool completely for 4 hrs, drizzle melted chocolate.

✨Flavourful Tips
All ingredients should be at room temp
You can swap ragi flour with any millet flour like jowar, bajra etc.
You can swap almond flour with walnut or cashew flour
If you feel the cake batter is still less sweet, you can add 2 tbsp jaggery powder
Don’t over mix the cake batter
