Tender beef simmered in aromatic spices, crispy golden eggplant, and fragrant rice cooked in rich beef broth come together in this irresistible Malaysian inspired one pot wonder! Ingredients:
4 cups rice
500g beef - diced, boiled with salt, pepper, turmeric, garam masala)
200g eggplant ((fried until crispy)
capsicum (optional, sliced)
2 tomatoes (chopped)
2 onions (sliced)
1 tbsp ginger-garlic paste
1 tbsp chili paste (adjust to spice level!)
Whole spices
4-5 small potatoes (fried)
Oil, curry leaves (for tempering)

Instructions
1. Boil beef with spices until tender. Keep the broth!
2. Cook rice in beef broth + whole spices (cardamom, cinnamon).
3. Fry eggplant, potatoes, capsicum separately. Set aside.
4. Heat oil, sauté onions, curry leaves, ginger-garlic paste, tomatoes, chili paste.
5. Add beef + fried veggies. Mix well!
6. Toss in rice. Combine everything.
