Ingredients
2 1/4 tsp active dry yeast (1 packet)
1 tsp sugar
1 cup warm water (110°F / 43°C)
2 1/2 cups all-purpose flour, plus extra for kneading
1 tsp salt
1 tbsp olive oil
Instructions
Activate the Yeast

In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5–10 minutes until it becomes frothy.
Make the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center, add the yeast mixture and olive oil, and stir to combine.
Turn the dough onto a floured surface and knead for about 8–10 minutes, or until it’s smooth and elastic. Add a little more flour if the dough is too sticky.
First Rise

Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for 1–2 hours, or until it has doubled in size.
Shape the Pitas

Once the dough has risen, punch it down to release any air. Divide it into 6–8 equal portions and shape each piece into a ball.
Roll each ball into a circle about 1/4-inch thick, about 6–7 inches in diameter.
Bake the Pita Bread

Preheat the oven to 475°F (245°C) and place a baking sheet or pizza stone inside to heat up.
Carefully place 1–2 pitas on the hot baking surface. Bake for 2–3 minutes, or until the pita puffs up and forms a pocket. Flip and bake for another 1–2 minutes, then remove from the oven.
Serve or Store

Let the pitas cool slightly before cutting. Serve warm, or store them in an airtight bag at room temperature for up to 2 days.
