Pretty easy to understand really. Say someone dropped their wallet, it's closed, you don't know who's wallet it is. Your first thoughts are likely "some*one* dropped their wallet" there's also the fact english makes it really easy to just use they/them pronouns instead of he/him or she/her, it's basic grammar really. Some people choose to go by different pronouns because they don't identify with the ones people have used since birth. It's personal preference and identity thing and it's pretty easy to find more about it from people who are more experienced (I'm just some cis straight guy) it's not really hard to respect people's pronouns either (not saying you dont) like you wouldn't go up to a cis she/her woman and use he/him pronouns. There's also always the option to just ask people their pronouns if you don't know them. It's just 4 words "What are your pronouns". That's just my attemt to educate you from the little knowledge I have on this since you say you just don't understand them

If u don’t understand I’d be happy to explain how it feels to me, a non-binary person. I think the best comparison I’ve ever heard is with a snap and the alphabet being compared to your identity and the current labels. We have labeled that “snap” noise with the word snap, however that word does not accurately describe the noise generated by that action. Similarly, a lot of people have just been labeled “boy” or “girl”, and just how the alphabet is limited and therefore cannot perfectly recreate and show that snap noise, the gender binary is limiting and does not accurately show and reflect our understanding of our gender. Gender is a spectrum that flows from boy to girl, and there can be people who exist within that spectrum, and those who can exist outside of it. Hope this helps :)
