One chef cuts up the dough and rolls each piece into a round skin for the dumplings. Another scoops the filling onto the skin and weighs it to make sure it's just the right size. Then the final chef closes up the dumpling with a series of 18 intricate folds at just the right angles and pressure, and voila! A dumpling is born and ready for steaming!
