What you need:
Sugar, water, peppermint extract, two mason jars, clothespins, lollipop sticks, measuring cup, a pot, food coloring, and a spoon

How to make peppermint sugar crystals:
1. Pour one cup of water into your pot and bring it to a boil on the stove.
2. Add two cups of sugar to the boiling water, stirring until everything has dissolved.
3. Remove the pot from the heat and let cool for a few minutes. Carefully pour the sugar mixture into the two mason jars.
4. Add a few drops of peppermint extract and food coloring to each cup, stirring to combine.
5. Dip your lollipop sticks into the mixture, then roll in sugar.
6. Attach each stick to a clothespin, suspending it in the sugar mixture. Make sure your lollipop stick isn’t touching the sides or bottom.
7. Wait a couple of days for the crystals to form.
8. Remove, let dry on a paper towel, and enjoy!

What’s going on?
When you heat sugar and water, you create a super-saturated sugar solution. This means that you’re getting a higher concentration of sugar in the hot liquid than you would in room-temperature water. As the solution cools the liquid starts to evaporate, making the sugar solidify again and grow crystals!
