This why I DO NOT recommend using whey protein powder in Keto baking. It is weak and has little to no structure compared to egg white protein powder. Egg white protein powder when cooked acts like gluten does.

I love the structural baking lesson in this video between the two ingredients especially in context toward gluten free baking. Although it is good to know that there is an option to utilize Whey Protein if for some reason egg powder are not available at the time, yet to expect that it just won't be as structurally sound as if it was baked with egg protein powder.

Best visual explaination ever. Just subscribed. Came across your quick 2 minute keto bread and new standard flour. Exciting discovery...expecially since I bought a microwavee just a few months ago. My first and was always very resistant against having one. However, my life is SOO much easier now taking care of two 'patients' (93 yo mother with beginning dementia) and an 82 yo husband with health issues and a very finicky palate. It reduced so much stress as far as kitchen duty is concerned.

Trying the self rising flour with 2 cups water bread recipe as I write this. I followed the advice of some other commenters on the previous short and added a tsp of allulose to help it brown and will cover it the last 15 minutes of baking! Super excited to see the results. Iā€™ve already made the cookies and cakes flour, the bisquick keto flour, and, of course, the self rising flour. Iā€™m having so much fun trying the recipes out!

Is there a difference between egg protein powder vs freezer dried egg white powder? It seems to me that they are the same thing.

You just said it, you canā€™t tear it apart. It does get styrofoamy if making egg white breadā€¦ do you mean incorporate this into your baked goods for a better rise? If mixed with other ingredients itā€™s better than whey? Just curious. Thank you.

Iā€™ve just had an idea, to use instant pavlova mix (egg white powder) in lieu of egg white protein powder which I canā€™t buy here in Oz, unless I pay over $Aud 75 per small bag. Now I need a substitute for oat fibre (any suggestions )?
