And as a japanese who went to the us, I honestly got exhausted with the "custom your own meal" us culture lol Almost every restaurant asked me what bread, sauce, sides, meat, veggies I wanted. US restaurants are basically all subway lol

I like the idea of specializations like that. Maybe the garlic thing is a bit extreme, but just being great at ramen or pork buns sounds good to me.

Where I live there's a bit of both: specialty restos and restos that try to serve most everyone. It's rare to find highly specific restos tho.

Definitely one amazing thing. When I travel to Asia I go to a lot of places like this. Do one or two wells extremely well or do everything extremely mediocre, which is the way of the average American restaurant.

Doing one thing and one thing great is the way to go. I live in Vancouver and if I see a Japanese restaurant that does sushi, ramen, tempura and grills, I avoid it like plague.

this is common in America, though? a lot of sit-down chains may have that menu, it's definitely common, but specified smaller restaurants are also normal.

In Europe, many restaurants have a limited menu, entree of the day. Also, try getting a salad in some random chinese place, you might not even get Kung Pao Chicken at a sichuan Shuizhuyu restaraunt in Beijing.
