It is all in the way it was recorded on site. The Zoom is a good machine, but you need superb microphones, placement and know how. Do that and the first organ will probably be the better because of the resonance, the spaciousness of the pipes, building etc. Sampling is good but nothing ever beats the real thing. A Concert Steinway or a sample - no comparison. Close, but still not the same. All the strings cause resonance on other strings, micro overtones, etc. Sampling does not really do that well.
