Yeah SharkBite this one's a fail. This guy has no idea what he's doing. Just cuz the wire is white doesn't mean it's a neutral. There's no neutral on a 240 volt water heater. Maybe the guy has only installed heat pump water heaters but I'm betting this is the first electric water heater he has touched. Anyone that's worked with electricity knows you don't just touch the bare end of the wire. Always avoid it even if it's dead and only touch it if you have to. It's one thing to have different techniques that people can argue for and against but it's a different thing to pass on wrong and dangerous information on your official youtube channel. If I saw this video and didn't know any better, I would hook a 120v 30 amp breaker to a an electric water heater and then wonder why it didn't work. Take this video down.

Please don’t rely on a non contact voltage tester. I’m an electrician and i can promise you sometimes they don’t beep even if voltage is applied. They are used VERIFY voltage is applied in a troubleshooting scenario. Please use a multimeter to ensure it is dead god bless you and please be safe and go home to your family
Edit: They are called widowmakers for a reason.
