I use the same jar daily and keep it as clean as possible and change it out when it gets a little too dirty(super crusty).
During a feeding, I discard part of my starter per usual and then scrape down as much residual starter as possible, reincorporating it back into the mixture.
In fact, I believe sourdough starters are even happier when we leave it in the same jar.
