While this is never explicitly stated, I think there's a very good reason Varney and in extension Death has such a foul mouth on him. The reason Death talks like this is because in this universe, magic stinks. The more concentrated the magic is, the more it smells. Death can take any form, but because he's so powerful he cannot hide the fact that he smells like a mass grave in high summer, so he disguises himself in filth, both literally, being a disgusting rat of a vampire and in mannerism. It's one of the best parts of his characterisation, the fact that he's too powerful to hide in upper society.

I think Varney is touching at something deeper here, especially how he throws out that last question.
Being everything he is, I think the sentiment hints to the uniqueness of the duality of the human condition.
We, unlike any, have the capacity through our actions to cause immense suffering, both to others, but also ourselves. It's the hubris that leads our agency towards evil, much like in this series, right?
However, it's also not to forget that as much as we can destroy, we can also create. In this, I think the sentiment he expresses tilts itself to think of our hands as actions, and our nature a paradox.

One has to remember: Dracula and Death have been best friends since the dawn of time, quite literally. They even crack a joke about it in multiple instances throughout the Castlevania series.
