this is actually so common in eastern part of asia.

china, India, japan, Indonesia...

they use the leftover rice that obviously already dried, hard, and smelly. they dry the rice outside. sun dried rice.

and then after that, use some seasonings and do some stuff, then just deepfry it.

japan have their senbei, Indonesia have kerupuk, rengginang, India also have their own stuff. and many more.

the new concept for west ppl, but actually a long time traditional thing for asians

Indian Papad is made with rice starch and legumes but this is a great variant. Add a tsp of cumin seeds to the batter for pops of flavour. If this is anything like papad, you can even microwave the dried chips instead of frying. Just store the dried sheet in an airtight box.
