what if instead of boiling the mushrooms so they're all wet, you pan fried or baked them? that way you cook all the water out and get that natural mushroom umami! idk if they'd stand up to shaving like that, but maybe you could try using chicken of the woods mushrooms so they have a chickeny flavor without having to flavor them!
