We followed a Chef Billy Parisi on how to make a spatchcock turkey and it turned out great! It was one of the juiciest turkeys we've ever had. Unfortunately, we had a problem with our syringe but went with the backup method of adding the butter mixture. Here's the recipe we used and cooked it on our Napolean grill for just over an hour at approximately 400 degrees.

1 - 16 lb turkey

Spice Mixture Ingredients
1/2 tbl spn fresh thyme
1/2 tbl spn fresh rosemary
8 sage leaves
1.5 tbl spn salt
lemon zest from 1/2 lemon

Butter Mixture Ingredients
2 sticks butter
Spice mixture
1 tspn minced shallot
1/2 tspn garlic paste
1/2 cup of white wine
