No pasta, more cheese—this low-carb recipe is perfect for using up all that zucchini. 🧀✨ It’s simple and quick, great for those busy weeknights.
I love making my own tomato sauce with fresh tomatoes, but you can also use store-bought sauce to save time!
Add lots of Crème Fraîche in the middle for extra cheesy goodness—because who doesn’t love creamy cheese? ❤️😋
INGREDIENTS:
for 4 portions:
2-3 zucchinis (depending on size)
300g ground beef
400ml tomato sauce
1 carrot (optional)
1 onion
1 clove of garlic
1 tsp oregano
1 tsp thyme
1 tsp marjoram
½ tsp chili (optional)
150ml milk
2 tbsp butter
1 tbsp flour
50ml cream
1 tsp nutmeg
Salt & pepper
200g Crème Fraîche
200g shredded cheese
PREPARATION:
Wash the zucchinis and cut them into thin slices.
Dice the onion and garlic clove into small pieces.
Wash the carrot and grate it finely.
Now, prepare the tomato sauce in a pan. Sauté the onion in a bit of olive oil over medium heat until translucent. Add the garlic and sauté briefly. Add the ground beef and cook it with the onions and garlic until it crumbles. Add the carrot and cook it briefly.
Now, add the tomato sauce (either store-bought or fresh tomatoes and then puree until it reaches a creamy consistency).
Season with oregano, thyme, marjoram, (optional chili), salt, and pepper, and let it simmer briefly before setting it aside.
Next, prepare the béchamel sauce. Melt some butter in a pot and stir in the flour. This should create a thicker consistency. Add the milk and cream, bringing it to a brief boil until it thickens. Season with salt, pepper, and nutmeg. Now it’s time to layer everything: Start with a bit of tomato sauce to cover the bottom of the dish, then layer zucchini slices on top. Add more tomato sauce, followed by a layer of béchamel sauce, and more zucchini slices. Around the middle of the dish, sprinkle the Crème Fraîche over the béchamel sauce and continue layering.Finish the lasagna with a layer of crème fraîche and a generous amount of shredded cheese.
