Thank you. I never really know what to do with alternative squashes.

The way I toast squash seeds… boil them in salted water, first. 1 tsp per 3 cups of water. Boil for 30 minutes. If you have an instant pot, manual, high pressure for 15 minutes, and 1 tsp for 2 cups of water (no evaporation, less water needed). Drain, pat dry, and roast in the oven, as desired.
