Never put oil in pasta water. Your sauce wonβt stick to the noodles nearly as well

Boiling pasta doesn't need oil, all you have to do is stir often the first 3 minutes, then it won't stick together.

Adding chicken and mushroom and leaving the Parmesan out. I think weβve gone quite far away from being able to call it an Alfredo.

Overcrowded the pan with the chicken and that's why it boiled and didn't brown. Brown in batches next time and try to avoid using a non stick pan. It won't get hot enough to sear properly.
