PISTACHIO FLUFF
Crust
1 cup flour
1/2 cup chopped pistachios
1 stick (1/2 cup salted butter)
1 Tablespoon of granulated sugar (optional)

Cream Cheese Layer
1 8 ounce package of cream cheese softened
1/2 tsp vanilla extract
1/2 tsp almond extract
1 cup powdered sugar
1 cup heavy cream (do not whip up beforehand)

Pudding Layer
1 and 1/2 cups whole milk
1 3.4 ounce box of instant pistachio pudding mix

Whipped topping of your choice for the top.

Directions
Mix the flour, pistachios, butter and sugar in a bowl. Press into an 8x8 pan. Bake at 350 degrees for 25 minutes.
Meanwhile mix the cream cheese, extracts, powdered sugar and heavy cream in a mixing bowl for 3 minutes or until fluffy.
Spread evenly onto the COOLED crust.
Then in a bowl, mix the milk and pistachio pudding mix together until thickened. Spread this mixture over the cream cheese layer.
Top with the whipped cream or cool whip. You can also sprinkle chopped pistachios on the top for decoration.
Keep refridgerated.
Makes about 9 servings.
