Ok that was a funny ending but Japanese knives are way too overrated. Don't get me wrong they are great knives but they are not worth the price. I would rather get custom made knives for just a bit more and know for sure they are truly hand made, unlike 99.99% of those mass produced die cutouts that you spend 500 bucks plus for just one knife when you can get the same quality and style from a place that caters to chefs for a bit less. I would rather spend 500 to 1k each on hand made knives. Let's not forget that even Japanese knives have to be properly maintain or they are just as good as that draw of old dull junk knives we all have in our kitchen.
