Ingredients:
Small size eggplants - 8 to 10 cut into thick slices
Chana dal - 1/4 tsp
Urad dal - 1/4 tsp
Mustard - 1/4 tsp
Curry leaves - few
Turmeric - 1/4 tsp
Asafoetida - 1/4 tsp
Salt - as needed
Oil - 2 tbsp
For Masala :
Dhania - 4 tbsp
Chana Dal - 1 tbsp
Urad Dal - 1 tbsp
Toor dal - 1/2 tbsp
Dry red chilly - 3 to 4
Method:
Wash eggplant and cut them into thick slices.
Dry roast all ingredients mentioned under masala and grind into a coarse powder. This masal can be stored and used later as well.
Heat a pn nd add oil. Add chana dal, urad dal, mustard seeds, asafoetida & curry leaves.
Add the eggplant and fry them. Add turmeric, salt and the masala.
Cook until they are well roasted.
Serve them with steamed rice and rasam or sambhar!
