Vegan Peach Upside Down Cakes
4 mini cakes
Ingredients:
Peach Layer -
Oil
2 tbsp sugar
2 peaches, sliced

Cake -
1 1/3 cups all purpose flour
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
6 tbsp oil
1 cup sugar
1/2 cup milk, of choice
1 tsp apple cider vinegar
1 tsp vanilla extract

Topping -
Cado Vanilla Bean

Instructions:
Preheat oven to oven to 350°F and line four mini cake pans with parchment paper
Coat each pan with oilSprinkle 1 TB sugar evenly into each pan and arrange sliced peaches on top, set aside
Whisk together flour, cinnamon, baking powder, baking soda, salt and set aside
Stir together oil and sugarMix in milk of choice, apple cider vinegar and vanilla extract
Add wet ingredients to the dry ingredients and mix wellDivide batter between pans, over peaches
Bake 25-30 minutes, until toothpick comes out clean
Cool cakes 10 minutes then run a knife around inside of pan to release cakes
Turn out onto serving plates and top with a big scoop of Cado Ice Cream
