To cook Egg Lababdar, you can follow the recipe below:
Ingredients:
4 boiled eggs
2 tablespoons ghee (clarified butter)
1 medium-sized onion, finely chopped
2 teaspoons ginger-garlic paste
2 green chilies, finely chopped
2 medium-sized tomatoes, pureed
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon garam masala
1/2 cup fresh cream
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Heat ghee in a pan over medium heat. Add the chopped onions and sauté until golden brown.
Add the ginger-garlic paste and chopped green chilies to the pan. Stir and cook for a minute until the raw smell disappears.
Pour in the tomato puree and cook until the oil separates from the mixture. This usually takes around 5-6 minutes.
Reduce the heat to low and add the red chili powder, turmeric powder, cumin powder, and garam masala. Mix well and cook for a minute to allow the spices to blend.
Slowly add the fresh cream while stirring continuously. Make sure the cream is well incorporated into the mixture.
Cut the boiled eggs into halves and gently place them in the pan, yolk-side up. Coat the eggs with the gravy mixture and cook for 5 minutes, allowing the flavors to infuse into the eggs.
Sprinkle salt to taste and give it a gentle stir. Simmer for another 2-3 minutes to let the flavors meld together.
Remove the pan from heat and transfer the Egg Lababdar to a serving dish. Garnish with fresh coriander leaves.
Serve the Egg Lababdar hot with naan, roti, or rice.
