Ahaaaa I knew I should have blanched my carrots before freeze drying to avoid the darkening color on the finished product.

Carrot tops make a great pesto (which is easy to freeze in ice cube trays) if you want to use even more of your harvest! 🎉

What would you say is the difference in texture when you reheat food after it's dehydrated versus being freeze dried? I know you've spoken about the nutrient preservation, but if you could talk about this, it would be helpful.
