Ansel did many things but - basically - this what was on the print was also recorded on the negative. No sky replacement or large areas of image "borrowed" from elsewhere.
All he did was proper exposing and processing of the negative and then printing with lots of burning/dodging and local contrast variations (on papers with variable gradation).
I did it also (with less appealing results tbh :) ) at the film era. And now, on digital, my understanding of "honest" image is exactly the same... Imo, when image is stitched (like Frankenstein's creature) from several images it is no longer a photograph, but rather a photorealistic (art)work.

Post isn't "manipulating a photo", it's completing a vision - or bringing the image towards what you pre-visualized. It's all a part of the photography process.
It's absolutely ridiculous to be of the thought that what the camera sees is the definitive deciding factor in what an image looks like especially when film and camera sensors don't have the dynamic range of the human eye.
Step out of the "snapshot" mindset and take control of your process by exercising some artistic decision making such pushing/pulling your shadows and highlights, global contrast, and local dodging and burning. Methods like these have been part of the photographic process since the 19th century.
