Simple… For these very old houses they’re not going to import lumber. What are the species growing in the general area that should narrow it down to maybe five maybe seven species

Depending on the region your in. A lot of century homes are old growth. I work on the same type of homes in the southeast and it's almost always "heart pine". Dont burn it!!

Anything straight or easily straitened I'd keep without question. As for species you need to talk to an old builder because whatever they used, it came from a local sawmill. Especially keep anything oversized, furniture makers would kill for it. Find a spot out of the rain where you can pile it tidily so you can see it, someone will buy it. I don't want to get your hopes up, but some of that old wood can be pretty darn dear these days, go check a specialized dealer.

Old lumber has a MUCH more dense grain structure. If you count the "rings" on modern lumber vs older lumber, you would most likely get 5-10x the amount of "rings" which results in a much stronger, more dense wood. There's a reason older houses are still stand with 24 inch centers while modern houses are falling apart woth 16 inch centers. We've "progressed" into our downfall.

Call the Forestry Extension department in your state. Your tax money pays for it. They are experts. I used to go to people's properties and tell them what was wrong with their trees free of charge for the Oregon Department of Forestry.

As any building ages, the wood dries and hardens even more. The various oaks around my city led to the slang term "Ironwood." You will wear out drill bits trying to bore one hole through a joist.

It’s mainly oak, hickory and chestnut.

After thinking about it, it would probably be faster and easier to just take a freshly planed or sanded piece to a good hardwood lumber dealer, not a big box store. The end grain should be smooth and clean.

Yes I would save it. It looks like red oak or chestnut

Beechwood It may be easier to guess the year to the building and what was native to the area then to understand the choice s. Sounds like you're talking about hardwood and you definitely think of some projects for that 😉
