“Quick Pressure Cooker Mutton Biryani in 45 Minutes!”

Here’s a super easy way to make delicious mutton biryani in under an hour using a pressure cooker!
1. Prepare the Masala:
• In a pressure cooker, heat 1/2 cup of oil.
• Add sliced onions and sauté until golden brown.
• Add 1 tsp garam masala and 2 tbsp ginger-garlic paste; mix well.
• Add 1 kg mutton pieces, cooking until they change color.
• Add 2 heaped tsp salt, 2 heaped tsp red chili powder, 2-4 green chilies, fresh coriander, and mint leaves.
• Stir in 250 ml curd and 2 cups of tomato paste, mix, and let it cook for a few minutes.
2. Pressure Cook the Mutton:
• Close the lid and pressure cook for 4-5 whistles.
• Once done, remove excess oil and set it aside for later use.
3. Prepare the Rice:
• Boil 3 liters of water in a large pot.
• Add 3 tsp salt, a squeeze of lemon juice, and basmati rice.
• Par-boil the rice until 75% done (about 6 minutes), then strain.
4. Assemble the Biryani:
• Add the par-boiled rice to the cooked mutton mixture (yakhni) in the pressure cooker.
• Gently mix and drizzle the reserved oil over the top.
• For color, add food coloring if desired and garnish with lemon wedges.
5. Slow Cook:
• Cover tightly and slow-cook (dum) for 15 minutes.
