George Lucas is weird with naming characters. Nute Gunray and Bail Organa both appear in the first 5 minutes of a movie and their names aren't said until halfway into the next one.

It always messed me up, from opening day, that Imperial forces were taken down by teddy bears with sticks and stones.

Sentient species have a hard time getting named on screen generally. Only Jawas & Wookiees get named in ANH (unless you count 'Sand People' and Human Beings), Hutts in TESB, and Bothans & Hutts again in RotJ. And that's the lot for the OT, pretty much everything else we know about species names was down to the credits (Ugnaughts, Ewoks), Kenner, the novels/comics, and Topps and West End Games years later.

Other non-sentient creatures do a bit better (Taun-tauns, gundarks, nerfs, mynocks, rancors and the Sarlacc).
